Find queso fresco in the cheese case at Mexican groceries or most supermarkets, usually sold in small rounds. Look for moist, fresh wheels rather than pre-crumbled packages, which tend to be drier. The cheese is mild, slightly tangy, and crumbles beautifully with a fork. It won't melt, so don't try to use it like cheddar. Beyond tacos, scatter it over salads, black beans, grilled corn, watermelon with tajín, or anywhere you want creamy, salty pockets of freshness. Use within a week of opening since it's a fresh cheese with no preservatives. If you can't find it, farmer's cheese or mild feta (rinsed of brine) are reasonable substitutes.
