Black garlic is regular garlic that's been aged at low heat and humidity for weeks until it turns dark, soft, and sweet. Find whole heads at Trader Joe's, Whole Foods, specialty grocers, or online. To make paste, simply squeeze the cloves and mash with a fork. The flavor is deeply umami with notes of balsamic, molasses, and tamarind but no raw garlic bite whatsoever. Beyond tacos, whisk a spoonful into mayo, sour cream, or aioli for instant depth. Stir into hot rice, noodles, or mashed potatoes. Blend with softened butter for finishing steaks or roasted vegetables. Mix into marinades and vinaigrettes for a mysterious savory note. The paste keeps refrigerated for weeks.
