Chef's Notes

Use a ripe avocado that yields to gentle pressure but isn't mushy or brown inside. Mexican crema is ideal, but sour cream thinned with a splash of milk and lime juice works perfectly. Blend until silky smooth; a few lumps are fine for rustic charm, but the goal is drizzle-able consistency. Add lime juice at the end and taste; it should be tangy and bright, not flat. The crema oxidizes quickly, so make it close to serving time or press plastic wrap directly onto the surface to prevent browning. Beyond tacos, dollop on grain bowls, grilled corn, chili, or use as a vegetable dip. If you have leftover ripe avocados and no immediate plans, this crema freezes better than whole avocados. The Taco Council considers avocado crema 'the great unifier' because it makes friends with nearly every filling.
